Each day the menu is built according to the best our producers provide to us at that moment. We use produce that is predominantly organic with carefully sourced, ethically raised meat and ﬁsh interspersed throughout. As meticulously as we source each product that enters our kitchen, so to do we source each bottle of wine that enters our cellar. As the seasons change, the wine list will too – ensuring that no matter which bottle a guest chooses, it will dovetail with the ﬂavours of that space and time.
